As promised, here is my vegan garlic naan recipe. This recipe doesn’t have to be vegan if you only have dairy milk and regular butter on hand 👌. ⠀ ⠀ #dEats : whisk 1 ¾ cups all purpose flour, ¾ tsp baking powder, 2 tsp coconut sugar (can use cane sugar if not doing vegan), and 1 tsp salt together in a bowl. Make a well in center of mixture and add ¾ unsweetened milk of choice (I used oat milk) and 2 tsp oil (I used avocado oil but olive oil would work too). Combine all ingredients into a dough and then need on floured surface for ~5 min. Let dough rest for 10 min then split into 8 pieces and roll out into super thin circles. Heat a bit of dairy free butter (my fav is crountry crock plant butter) in a pan and cook each piece for about 1.5 min on each side. Once the naan is done cooking, melt some more vegan butter and brush each piece then sprinkle with garlic and cilantro. ⠀

I’m practicing some Thanksgiving recipes over the next week, so last night I made these pumpkin cheesecake bars. They turned out really great and got me super excited for Thanksgiving day. I absolutely love cooking my family’s meal and now that it’s my 3rd year preparing Thanksgiving I’m dead set on making everything perfect. Y’all will definitely be seeing more Thanksgiving dishes from me soon!
This was a “throw everything that expires soon in a bowl” meal that may become an everyday breakfast for me now. This was also my first time poaching an egg and I’m pretty proud of myself 😂. #dEats : arugula with evoo, lemon juice, and s&p + 2 poached eggs, 2 @morningstarfarms sausage patties, and some cherry tomatoes sautéed in oil with garlic
Today was overcast and rainy here which is the perfect weather for comfort foods in my opinion. I threw together some bow tie pasta, tomato sauce, @gardein meatless meatballs, and parmesan cheese for this lunch, and it definitely hit the spot. Dreary fall days are weirdly comforting to me, and I really enjoy spending the time inside all cozied up. I struggle to get things done on days like today, though, so finishing the metabolism homework due tonight is going to be rough 😅.
Lunch today was @traderjoes cauliflower gnocchi with their kale pesto + steamed shrimp and sautéed cherry tomatoes. Just in case anyone was wondering, I don’t have a problem with carbs or believe in substituting cauliflower for everything, but I’ve heard this gnocchi is good so I wanted to try it out. It was tasty, but I still love my regular gnocchi more 🤷♀️.
