Learn how to make the perfect double cheeseburger with tips from George Motz, the burger scholar. This classic American burger is juicy, cheesy, and full of flavor!

Ingredients: 2 lbs ground beef 80% lean. Salt and pepper to taste. 4 slices American cheese. 4 hamburger buns. 1/4 cup mayonnaise. 1/4 cup ketchup. 1/4 cup yellow mustard. 1/2 cup chopped onions. 8 dill pickle slices. 4 lettuce leaves. 4 tomato slices.

Instructions: Warm up your griddle or grill over high heat. Form the ground beef into 8 thin patties that are all the same size. On both sides of each patty, sprinkle salt and pepper. Put the patties on a hot grill or griddle and cook for two to three minutes on each side, or until they get a nice crust and are done the way you like them. Put a slice of American cheese on top of each patty in the last minute of cooking and let it melt. Toast the buns on the grill until they are lightly browned while the patties are cooking. To make the sauce, mix the mayonnaise, ketchup, and yellow mustard in a small bowl. Spread the sauce on the bottom half of each bun before putting the burgers together. Cover the sauce with a lettuce leaf. Then add a tomato slice, two pickle slices, two patties with melted cheese, and a sprinkle of chopped onions. Place the other half of the bun on top and serve right away.

The Regional Tennessee Deep Fried Hamburger - My first attempt cooking on my burger journey. Long before flat tops burgers were cooked in cast iron skillets. During busy lunch rushs the cooks did not have time to change out the beef tallow building up and eventually the hamburgers just became deep fried. A little oil from the cast iron is spread across a marble cooking surface. A beef ball is smashed out razor thin then transferred into the 325 degree oil. After a minute or two a slice of American cheese is placed on top and submerged again. Served with raw onion, pickle chips and mustard on a squishy bun. The hamburger emerges with super crispy surrounding edges but retains a wonderfully juicy center with gooey american cheese flowing over everything. Dyer's Burgers located in Memphis Tennessee have been cooking hamburgers with this method since 1912.
