It's a cheesy stromboli with grilled chicken, broccoli rabe that has been blanched, and a mix of mozzarella and Parmesan cheese. The crust is made of crispy pizza dough. It's great for a meal or an appetizer!
Ingredients: 1 lb pizza dough. 1/2 lb cooked chicken breast, sliced. 1 cup broccoli rabe, blanched and chopped. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/4 cup marinara sauce. 1/2 tsp red pepper flakes. 1/2 tsp garlic powder. Salt and pepper to taste. Olive oil for brushing.
Instructions: Warm up the grill over medium-high heat. On a floured surface, roll the pizza dough into a rectangle shape. Cover the dough with marinara sauce, making sure to leave a border around the edges. On top of the sauce, put broccoli rabe, mozzarella, Parmesan, and sliced chicken. Add garlic powder, salt, pepper, and red pepper flakes. Carefully fold the dough over the fillings and press the edges together to make a stromboli. Use olive oil to coat the top of the stromboli so it doesn't stick to the grill grates. After the grill is hot, put the stromboli on it and cook for 5 to 7 minutes on each side, or until the dough is golden and crispy and the cheese melts. Take it off the grill and let it cool down a bit before cutting it. You can dip your tasty Chicken and Broccoli Rabe Stromboli in extra marinara sauce before serving. Have fun!
