Keto Vegetable Cauliflower Lasagna with Meatballs
A simple and delicious sweet and sour meatball recipe made with just three ingredients, perfect for a quick and easy meal or appetizer.
Ingredients: 1 bag frozen meatballs. 1 can 20 oz pineapple chunks in juice. 1 bottle 12 oz sweet and sour sauce.
Instructions: Place frozen meatballs in the slow cooker. Add pineapple chunks with juice. Pour sweet and sour sauce over the meatballs and pineapple. Stir to coat meatballs evenly. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until meatballs are heated through. Serve over rice or as appetizers.

Ingredients: 1 lb ground beef. 1/2 cup gluten-free breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1 egg. 2 cloves garlic, minced. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 tablespoons olive oil.
Instructions: Preheat oven to 400F 200C. In a large bowl, combine ground beef, gluten-free breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and black pepper. Mix until well combined. Shape mixture into 1-inch meatballs. In a large skillet, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 5 minutes. Transfer meatballs to a baking sheet and bake in the preheated oven for 10-12 minutes, or until cooked through. Serve hot with your favorite gluten-free pasta or as appetizers with marinara sauce for dipping.
