Instructions: Preheat a nonstick skillet on medium heat. Cook until the bell peppers are soft, about 5 minutes. Set aside after removing from the pan. Melt 1 tablespoon butter in the same pan over medium heat. Cook until the ham slices are lightly browned on both sides, about 2 minutes per side. Set aside after removing from the pan. Over medium heat, add another tablespoon of butter to the same pan. Crack the eggs into the pan and cook for 3-4 minutes, or until the whites are set but the yolks are still runny. Toast the bread slices in a toaster or a separate pan while the eggs are cooking. To assemble, place one slice of toast on a plate, top with the cooked bell peppers, and then top with the ham slices. On top of the ham slices, place the second slice of toast. Finally, place the fried eggs on top of the second slice of toast and season to taste with salt and pepper.

Remove from the heat and set aside for a minute to cool before serving.
