This 15-bean soup with ham cooked in a slow cooker is hearty, tasty, and great for a cold day meal. When you mix soft beans, salty ham, and fragrant vegetables, you get a dish that the whole family will love.
Ingredients: 1 package 20 ounces of 15 bean soup mix, soaked overnight and drained. 1 ham bone or 1-2 cups diced ham. 1 onion, chopped. 3 cloves garlic, minced. 3 carrots, diced. 3 stalks celery, diced. 1 can 14.5 ounces diced tomatoes. 6 cups chicken or vegetable broth. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Optional: hot sauce or red pepper flakes for added spice.
Instructions: Soak the beans, add the ham bone or diced ham, chopped onion, minced garlic, diced carrots, diced celery, diced tomatoes, chicken or vegetable broth, and dried thyme and rosemary. Put the whole thing in a slow cooker. For 8 to 10 hours, or until the beans are soft, cover and cook on low heat. If you used a ham bone, take it out and shred any meat that's still on it. Shred the meat and put it back in the slow cooker. Add pepper and salt to taste. If you want more heat, you can add hot sauce or red pepper flakes. Enjoy while hot!
