Ingredients: 2 cups soy curls. 1 onion, diced. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 carrot, shredded. 1/4 cup soy sauce. 2 tbsp hoisin sauce. 1 tbsp rice vinegar. 1 tsp sesame oil. 1 tsp sriracha sauce. 1 head lettuce, leaves separated. 1/4 cup chopped green onions. 1/4 cup chopped cilantro. 1/4 cup chopped peanuts.
Instructions: Rehydrate soy curls in warm water for 10 minutes, then drain. In a pan, saut onion and garlic until fragrant. Add bell pepper and carrot, cook until tender. Add soy curls, soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha. Cook for 5 minutes. Fill lettuce leaves with the soy curl mixture. Top with green onions, cilantro, and chopped peanuts before serving.
