Nice to dip some wholemeal toast in. ▫️ 📖 Beetroot Hummus Ingredients: 🔵 1 cooked beetroot 🔵 1 can of chickpeas 🔵 1/4 cup fresh lemon juice 🔵 1 garlic clove 🔵 1/4 tsp coriander 🔵 Mint leaves for topping ▫️ 📖 Instructions: 📍 Blend all ingredients in a food processor until smooth, can be kept for 4 days in the fridge. Cucumber sticks dipped in beetroot make a good pre-work out snack due to the beets improved blood and oxygen flow to tired muscles. ▫️ 📖 Spicy Carrot Hummus Ingredients: 🔵 2 medium cooked carrots 🔵 1 can of chickpeas 🔵 1/3 cup tahini 🔵 1/4 cup lemon juice 🔵 1 garlic clove 🔵 1 tbsp cayenne pepper 🔵 1/4 tsp cumin ▫️ 📖 Instructions: 📍 Place carrots in foil with 2 tbsp water. Cook for 40 - 50 minutes.
