Ingredients: 4 chicken thighs, bone-in, skin-on. 1 cup almond flour. 2 eggs, beaten. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Coconut oil, for frying.
Instructions: In a shallow dish, mix almond flour, paprika, garlic powder, onion powder, salt, and black pepper. Dip each chicken thigh into the beaten eggs, then dredge in the almond flour mixture, coating evenly. Heat coconut oil in a skillet over medium-high heat. Place the coated chicken thighs in the skillet and fry until golden brown and crispy, about 5-6 minutes per side. Transfer the fried chicken to a plate lined with paper towels to drain excess oil.
