August 14, 2017 Lunch was small today cuase i had a fatty breakfast and i need to save the rest for dinner. This will be my first official keto day in a couple months. It will be challenging but i remembered how great i felt when i did strict keto for 1 month! Stomach was flatter, my face was not swollen. I started out at 280 and this morning came in as 270. I have pretty much been 270lbs since beginning of july. I just have maintained even when i ate carbs, ice cream and junk food 😑😑😑..😉 can't wait to go for longer without cheating or giving up. Poopy😓

Low Carb Taco Shells Recipe
One of the easiest and most delicious keto things I've made. Generally when I have a craving for tacos I just have a taco salad, but yesterday was Cinco De Mayo and I found myself with a real craving for those crispy, crunchy taco shells. So...I improvised.
All you need:
Shredded cheddar cheese
A skillet
A pot
A thick handled wooden spoon
Taco stuff
Toss a hand full of cheese into the hot skillet. Don't let it burn, but wait until it's hard enough to flip over. When both sides are mostly hard but not totally crunchy, take the cheese pancake out. Drape it over the thick handled wooden spoon and prop the whole thing up over the pot. In a few minute, the cheese will harden into a taco-shell shaped masterpiece.
I lined our taco shells with lettuce leaves (I tried to make these pretty thin, so they were kinda porous) and filled them with ground lean beef, salsa, home made guacamole, and greek yogurt.
Delicious, and totally keto-friendly.
