Ingredients: 1 cup all-purpose flour. 1/2 cup butter, softened. 1/4 cup granulated sugar. 1/4 cup powdered sugar. 1 egg yolk. 1 teaspoon key lime zest. 2 tablespoons key lime juice. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup graham cracker crumbs. 1/4 cup white chocolate chips. 1/4 cup chopped toasted coconut.
Instructions: In a mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy. Add the egg yolk, key lime zest, key lime juice, and vanilla extract. Mix until well combined. Gradually add the flour and salt to the wet ingredients, mixing until just incorporated. Fold in the graham cracker crumbs, white chocolate chips, and chopped toasted coconut. Cover the cookie dough and refrigerate for about 30 minutes. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Take spoonfuls of the chilled dough and roll them into small balls. Place the balls on the prepared baking sheet.
