After several loads of laundry this afternoon and my weekly 4 p.m. chat with my folks Kevin and I went to a new (to us) grocery store, Harris Teeter. We’d been to the downtown store but not this one over in the opposite direction. We went to stock up on keto goods for the week ahead and had a fantastic time in the store! It had everything we get at several different stores all in one place! After trying out Walmart, Food Lion, and Target I think we’ve found our new go-to-grocery store.
One specific thing I was looking for at the store was Halo Top ice cream. I’d seen lots of people on here talk about it, rave about, use it in recipes and every time I went to a store it was never to be found! Until today!! I picked up a pint of Vanilla Bean and Sea Salt Caramel. Looking forward to having a bite or two tonight!
We were running low on olive oil so we were looking at the huge aisle of options when all of a sudden the bottle and brand, “California Olive Oil” pops out to me. 1) because CALIFORNIA! YAY! and 2) because the name seemed way too familiar. All of a sudden, it clicked - I knew the company from back home! And low and behold when I turned the bottle over I was right. Great job getting all the way out to Virginia, Chico company!!
Earlier today when I was scrolling through my dash and I ran across this keto recipe for nachos! We wanted something quick and easy for dinner after shopping so we threw it together and it was damn tasty. Next time, we’ll either completely omit the pork rinds (they got soft and chewy in the microwave when we were melting the cheese), use a broiler to melt the cheese, or make the base and use the pork rinds to dip into the goodness. Another option Kevin thought of was frying low carb tortillas and making chips to go with it. We’ll definitely be putting this one in the meal rotations!
