Idk if this has already been asked/ answered, but is Edwin, in your opinion, a good dad, a mediocre dad, or a bad dad?

Mediocre. It's pretty clear he cares about his son, but it's also pretty clear he prioritized work over all else. He put David's playground in a dangerous area so he could work while watching him, he worked instead of attending David's birthday, he delegates taking care of his child to M1, and we hear M2 repeat back to him the way he brushed off David. So while I don't think he was a bad dad, since his kid was taken care of, but he's not a good dad because he was relatively neglectful

If game Michael was a parent, I think he'd try to be a better parent than his dad (which isn't hard), but he'd probably struggle since he doesn't exactly have any good role models in his life and I doubt he's really worked through it considering how he dedicates his afterlife to hunting down his dad and is presumably ready to die at the end of FFPS. I think he if was put in charge of a kid though, he'd be able to reroute his priorities to make sure the kid doesn't suffer the way he and his siblings did. And as a Glammike believer, I think part of Freddy's behavior toward Gregory is influenced by Michael, though a lot of it would be Freddy's personality chip, so there's that
