Ingredients: 1 cup quinoa, rinsed and cooked. 1 ripe mango, diced. 1 can black beans, drained and rinsed. 1 ripe avocado, diced. 1/2 cup red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup lime juice. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large bowl, combine cooked quinoa, diced mango, black beans, avocado, red bell pepper, red onion, and cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss gently to coat everything evenly.
