Ingredients: 1/2 cup unsalted butter. 4 oz semisweet chocolate, chopped. 2/3 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup all-purpose flour. 1/4 cup unsweetened cocoa powder. 1/4 tsp salt. 1/4 cup sour cream. 1/4 cup mini chocolate chips. 1/2 cup unsalted butter, softened. 1 1/2 cups confectioners' sugar. 1/2 tsp vanilla extract. 7 oz marshmallow fluff. 1/4 cup unsweetened cocoa powder. 1/4 cup heavy cream. 1/2 cup mini marshmallows for garnish. Chocolate shavings for garnish.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a microwave-safe bowl, melt the 1/2 cup of unsalted butter and chopped semisweet chocolate in 30-second intervals until smooth, stirring in between. Let it cool slightly. In another bowl, whisk together granulated sugar, eggs, and 1 tsp of vanilla extract until well combined. Add the melted chocolate mixture to the egg mixture and mix until smooth. In a separate bowl, sift together the all-purpose flour, 1/4 cup unsweetened cocoa powder, and 1/4 tsp of salt. Gradually add this dry mixture to the chocolate mixture, mixing until just combined. Stir in the sour cream and 1/4 cup of mini chocolate chips. Divide the batter evenly among the cupcake liners in the muffin tin, filling each about 2/3 full. Bake in the preheated oven for approximately 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Allow the cupcakes to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely. In a separate mixing bowl, beat the softened 1/2 cup of unsalted butter until creamy. Gradually add in the confectioners' sugar, 1/2 tsp of vanilla extract, and 1/4 cup of unsweetened cocoa powder. Mix until well combined and fluffy. Add heavy cream to the frosting mixture and beat until smooth and creamy. Spread or pipe the chocolate frosting onto the cooled cupcakes. Place a dollop of marshmallow fluff on top of each frosted cupcake, and use a kitchen torch to lightly toast the marshmallow until it's golden brown.
