This Chocolate Raspberry Cake from @kopatissier was our 1st encounter w/ the French technique glaçage miroir (mirror glaze) so we were in awe of its beauty. Not only is this cake aesthetical appealling, its smooth coating also preserves the moisture of the rich but not-too-sweet chocolate mousse, tangy raspberry jelly & light sponge cake w/in making the entire cake delectable. Hence, this a masterpiece that trully articulates the pâtissier's skill & passion w/c deserves our utmost praise & recommendation.
