This tasty fusion recipe combines the chewy texture of mochi with the tastes of sushi. These do-it-yourself mochi sushi rolls are a fun take on regular sushi. They make a tasty meal or snack that is different from the norm.
Ingredients: 1 cup sushi rice. 2 tablespoons rice vinegar. 2 tablespoons sugar. 1/2 teaspoon salt. Nori seaweed sheets. Assorted sushi fillings e.g., cucumber, avocado, smoked salmon. Mochi store-bought or homemade.
Instructions: Cook sushi rice according to package instructions. In a small saucepan, mix rice vinegar, sugar, and salt. Heat until sugar and salt dissolve. Pour this mixture over the cooked rice and mix well. Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of seasoned sushi rice over the nori, leaving a small border at the top. Arrange your desired sushi fillings in a line across the center of the rice. Cut the mochi into thin strips and lay them over the fillings. Roll the sushi tightly using the bamboo mat, applying gentle pressure as you roll. Slice the sushi roll into bite-sized pieces using a sharp knife. Repeat with remaining ingredients. Serve with soy sauce, wasabi, and pickled ginger.
