A case for beefy Gideon
Mortus was a big guy that needed 2 ropes to hang himself. Ortus is also a big guy that Harrow compared to a potato. Both of them where born and raised on the Ninth. This House also has a big population of elderly people that mostly die of natural causes related to old age.
It's safe to assume that this nutritional paste has enough amino acids, fibers, vitamins, fats, ions, etc., to keep adults healthy. That's why the population is able to achieve old age. The snow leeks and gruel seem to be something to help with taste and texture, and to add variety to their died.
Don't get me wrong, the Ninth is still food insecure. They have a limited source, that if compromised would put them at risk. It fills all the requirement of human physiology, but people aren't made to only eat 1 thing for the entire lives, humans aren't machines.
The Ninth has an entire generation surplus of food because of "the flu". The narrative explicitly shows that Gideon would steal food to eat more, and if you eat beyond the necessary food supplements your body will store it for later use, or eliminate it.
I've seen arguments disregarding Jeannemary's point of view because she is an impressionable teenager. However you have to remember that all the time during their stay at Canaan House Gideon was covered in a robe with a hood. She even duel wearing it. So Jeannemary saw her biceps definition under an article of clothing made to hide any definition! Also, Jeannemary comes from a cavalier lineage that can be traced back to the Resurrection, and was going to enlist at thirteen, so she knows what a strong person looks like. Let's not ignore her opinion just because she is young.
Another important element for body type is genetics.
John is described by M(?) as having "the body of a history teacher". How to interpret that I think is up to the reader. I see it as the equivalent of an average guy that spend a lot of time sitting down studying, and that if given the chance would benefit from more exercise and sun light(just like me!). Wake, on the other hand, is a very skilled fighter that seemed to have killed many necromancers. We see her in action in the river bubble, and while that place enhanced her resistance to injury, it doesn't give the person other abilities beyond what they know, or a better physique. With that in mind she's able to defeat multiple cavaliers, and was able to perform feats of athleticism that would impress Camilla Hect. So from her mother side Gideon has great potential for physical development.
Gideon exercises regularly and enjoins doing it.
She does upside-down push-ups for fun(which is insane). Even though she dislikes running, she said she did it frequently on the Ninth and even did it at Canaan House. Besides her training with Aiglamene, she even received some unorthodox exercises from Crux, who had repeating crossbow and 2 skeletons with machetes.
"But the book covers!"
Are gorgeous. However, Gideon doesn't look like a fighter that trained since childhood for strength and movement explosion. She looks like runner. If you take the covers as 100% canon, you will have to concede Gideon and Harrow being almost the same height, which is contradicted by the books, and that Nona and Harrow are physically the same person but their face structure is different (and, it's not only the angle).
Another detail that I've seen people question is her height. Gideon isn't the tallest character in the book, but she is among the tallest in the distribution curve. We know that because she makes a comparison. She states that Naberius is half a head shorter than Coronabeth, which one of the tallest characters in the series, and when she duels him she realizes that she is an inch taller. It's Harrow's height that we have less detail about.
I'm tired that discussions about this are always trying to reinforce the position that a woman can only be strong if they stay slim and "feminine" ("for the male gaze" implied), and anything bigger than She-ra or Wonder Woman is too much.
