You can enjoy these tasty caramel apples without feeling bad about it because they are made with a naturally sweetened, creamy caramel sauce. Great as a healthy snack or dessert!
Ingredients: 6 medium-sized apples. 1 cup dates, pitted and soaked in warm water for 1 hour. 1/4 cup unsweetened almond milk. 1/2 teaspoon vanilla extract. Pinch of salt. Chopped nuts or seeds optional, for coating.
Instructions: Put a wooden stick into the end of each apple stem and set them aside. Put the dates that have been soaked, almond milk, vanilla extract, and salt in a blender. If you need to make it thicker like caramel, add more almond milk and blend until smooth and creamy. Dip each apple into the caramel mix and make sure they are all covered. Let the extra caramel run off. If you want to add more texture, you can roll the apples in chopped nuts or seeds after coating them in caramel. Put the apples with caramel on a baking sheet lined with parchment paper. Set them in the fridge for at least 30 minutes. Enjoy!
