A healthy broccoli soup with a hint of ginger that is great for a cozy meal.
Ingredients: 4 cups broccoli florets. 1 onion, chopped. 2 cloves garlic, minced. 1 tablespoon fresh ginger, grated. 4 cups vegetable broth. 1 cup coconut milk. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Saut until onions are translucent. Add broccoli florets and continue to saut for 2-3 minutes. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes or until broccoli is tender. Use an immersion blender to puree the soup until smooth. Stir in coconut milk and season with salt and pepper to taste. Simmer for an additional 5 minutes. Serve hot, garnished with a sprinkle of fresh chopped parsley or a drizzle of coconut milk if desired.
