Ingredients: 1 large cauliflower, chopped into florets. 1 can 13.5 oz of full-fat coconut milk. 1 teaspoon ground turmeric. 2 cloves garlic, minced. 1 onion, chopped. 4 cups vegetable broth. 1 lime, zest and juice. 2 tablespoons olive oil. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and saut until the onion is translucent. Stir in the ground turmeric and cook for another minute to release its flavor. Add the cauliflower florets to the pot and cook for 5 minutes, stirring occasionally.
