These Apple Oat Greek Yogurt Muffins are a healthy and satisfying breakfast or snack option. Ingredients: 1 1/2 cups old-fashioned oats. 1 cup plain Greek yogurt. 1/2 cup unsweetened applesauce. 1/2 cup honey or maple syrup. 2 large eggs. 1 tsp vanilla extract. 1 1/2 cups diced apples. 1/2 cup chopped nuts optional. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp nutmeg. 1/4 tsp salt.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a muffin tin. Pulse the oats in a blender or food processor until they look like coarse flour. Mix the oat flour, Greek yogurt, applesauce, eggs, honey or maple syrup, and vanilla extract in a large bowl. Mix everything together well. Add the apple dices and nuts, if using, and mix them in well. Put in the salt, baking soda, cinnamon, nutmeg, and baking powder. Stir the batter until all of the dry ingredients are mixed in. Fill up each muffin tin cup about two thirds of the way to the top with batter. The muffins should be baked in a hot oven for 18 to 20 minutes, or until they are golden brown and a toothpick stuck in the middle comes out clean. When you take the muffins out of the oven, let them cool for a few minutes in the pan before moving them to a wire rack to cool all the way through.
