These Healthy Pumpkin Chocolate Chip Oatmeal Cookies are a delicious treat for the fall or any time of year. Ingredients: 1 cup canned pumpkin puree. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1 1/2 cups rolled oats. 1 cup whole wheat flour. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon salt. 1/2 cup dark chocolate chips. 1/2 cup chopped nuts e.g. walnuts or pecans.
Instructions: Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Combine the pumpkin puree, maple syrup, melted coconut oil, and vanilla extract in a large bowl. It's time to make the cookies! Take a different bowl and mix together the whole wheat flour, baking powder, baking soda, salt, ground cinnamon and nutmeg. Slowly add the dry ingredients to the wet ones while stirring them together. The dark chocolate chips and chopped nuts should be carefully mixed in. Using a spoon or cookie scoop, drop dough by spoonfuls onto the baking sheet that has been prepared, leaving space between them. Press down a little on each cookie with the back of the spoon or your fingers. After the oven is hot, bake for 12 to 15 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down.
