Instructions: In a mixing bowl, combine soy sauce, rice vinegar, garlic, ginger, sesame oil, sugar, and red pepper flakes. Add cucumber slices to the bowl and toss until well coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, garnish with chopped green onions.
