Pineapple Upside-Down Pancakes- Sweet Tropical Breakfast Treat
Give your morning the island treatment with these delightful Pineapple Pancakes topped with homemade Coconut Syrup. It's like a mini vacation on your breakfast plate!
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 1/4 cup crushed pineapple drained. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. For Coconut Syrup:. 1/2 cup coconut milk. 1/4 cup sugar. 1/4 cup shredded coconut. 1/4 teaspoon vanilla extract.
Instructions: Put the all-purpose flour, sugar, baking powder, baking soda, and salt in a bowl and mix them together. Add the egg, crushed pineapple, melted butter, and vanilla extract to a different bowl, and mix them together quickly with a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. There should be some lumps, but not too many. Put a nonstick griddle or skillet over medium-low heat and lightly coat it with cooking spray or butter. Place a quarter-cup of the pancake batter on the pan for every pancake. If the pancakes start to bubble on top, flip them over and cook the other side until it's golden brown. Put sugar and coconut milk in a small saucepan and heat them over medium-low. This will make the coconut syrup. Mix the sugar in until it's gone. Mix in the vanilla extract and shredded coconut. Simmer for a few minutes until the mixture gets a little thicker. Cover the Pineapple Pancakes with Coconut Syrup and serve them. Have fun with your tropical breakfast!
