These spelt potato rolls made in a slow cooker are vegan, soft, fluffy, and incredibly tasty. Serve them with soups and stews or eat them by themselves as a snack.
Ingredients: 2 cups whole wheat spelt flour. 1 cup mashed potatoes. 1/4 cup warm water. 2 tablespoons maple syrup. 1 tablespoon instant yeast. 1/4 cup olive oil. 1 teaspoon salt.
Instructions: In a bowl, mix warm water and maple syrup, then sprinkle yeast over it. Let it sit for 5 minutes until frothy. In another bowl, combine mashed potatoes, olive oil, and salt. Add the yeast mixture and stir well. Gradually add spelt flour and knead until a smooth dough forms. Cover the dough and let it rise for 1-2 hours until doubled in size. Divide the dough into small rolls and place them in a greased slow cooker. Cover and cook on low for 2-3 hours until the rolls are cooked through and golden brown. Serve warm and enjoy!

Ingredients: 3 ripe bananas, mashed. 1/3 cup melted coconut oil. 1/2 cup maple syrup. 1/4 cup plant-based milk. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup fresh blueberries.
Instructions: Warm the oven up to 175F 350C. Grease a loaf pan that's 9x5 inches. Put mashed bananas, melted coconut oil, maple syrup, plant-based milk, and vanilla extract in a large bowl. Mix the flour, baking powder, baking soda, and salt in a different bowl using a whisk. Mix the dry and wet ingredients together until they are just barely mixed. Add fresh blueberries slowly and carefully. Spoon the batter into the loaf pan that has been prepared. Use a spatula to smooth the top. Put it in the oven and bake for 50 to 60 minutes, or until a toothpick stuck in the middle comes out clean. Remove from the oven and let cool for 10 minutes in the pan. Then, move to a wire rack and let cool all the way through.

Add the dry ingredients, maple syrup, non-dairy milk, and olive oil to the mashed sweet potatoes. Mix until a dough forms. Turn the dough out onto a floured surface and knead gently for a few minutes. Divide the dough into 8 equal portions and shape each into a bun. Place the buns on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the buns are golden brown and cooked through. Remove from the oven and let cool slightly before serving.

Preheat the oven to 375F 190C. Bake the rolls in the preheated oven for 15-20 minutes or until they're golden brown on top. Optional: Brush the warm rolls with additional melted vegan butter for extra flavor and shine. Serve warm and enjoy!
