This simple but tasty vegan roasted tomato pasta dish has the sweetness of roasted cherry tomatoes, the smell of garlic, and the taste of fresh basil. It's a quick and easy meal that's great for the middle of the week.
Ingredients: 500g cherry tomatoes, halved. 4 cloves garlic, minced. 2 tbsp olive oil. Salt and pepper to taste. 300g pasta of choice e.g., spaghetti, penne. Fresh basil leaves, chopped, for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Add the cherry tomatoes that have been cut in half to a baking sheet. Add the minced garlic, olive oil, salt, and pepper. When the oven is hot, put the tomatoes in it and roast them for 20 to 25 minutes, or until they are soft and slightly caramelized. Follow the directions on the package to cook the pasta until it's al dente while the tomatoes are roasting. Remove the water and set it aside. Take the tomatoes out of the oven when they're done and mix them with the cooked pasta. Add chopped fresh basil leaves to the top of the pasta.
