Scratch Spaghetti Bolognese
I’ve never been a big fan of canned tomatoes, or at least the canned tomatoes I do get from my grocer. Recent discovery: tomato sauce made from scratch is super easy and significantly more flavourful. I find canned tomatoes are a bit tougher and definitely on the sour side. Whenever I use them I have to add some sugar and cook them for a while so they meld into a sauce, neither of which are necessary when using fresh tomatoes.
Method: When using fresh tomatoes I highly recommend blanching them to take off the skin. It improves the texture of the sauce immeasurably. They only need maybe 40 seconds in boiling water (may depend on your elevation, I’m at sea level). For peeling ease core them and cut an X into the bottoms then blanch away. Use the edges like tabs to peel off the skin. Chop em up, throw em in, cook it off. The sauce will be naturally sweet, smooth and super fresh after a nice simmer for 30 minutes or so.
By the way, a really killer mod for bolognese is to take the casings off of spicy italian sausages and use them instead of plain old ground beef or pork.

One-Pot Spinach Tomato Pasta Easy & Delicious
This simple but tasty vegan roasted tomato pasta dish has the sweetness of roasted cherry tomatoes, the smell of garlic, and the taste of fresh basil. It's a quick and easy meal that's great for the middle of the week.
Ingredients: 500g cherry tomatoes, halved. 4 cloves garlic, minced. 2 tbsp olive oil. Salt and pepper to taste. 300g pasta of choice e.g., spaghetti, penne. Fresh basil leaves, chopped, for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Add the cherry tomatoes that have been cut in half to a baking sheet. Add the minced garlic, olive oil, salt, and pepper. When the oven is hot, put the tomatoes in it and roast them for 20 to 25 minutes, or until they are soft and slightly caramelized. Follow the directions on the package to cook the pasta until it's al dente while the tomatoes are roasting. Remove the water and set it aside. Take the tomatoes out of the oven when they're done and mix them with the cooked pasta. Add chopped fresh basil leaves to the top of the pasta. Feel free to serve the vegan roasted tomato pasta hot and enjoy!

This Pesto Chicken Pasta Skillet combines tender chicken breast pieces with vibrant cherry tomatoes, crisp asparagus, and flavorful pesto sauce, all tossed with cooked pasta and finished with a sprinkle of Parmesan cheese.
Ingredients: 2 chicken breasts, diced. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 1 bunch asparagus, trimmed and cut into bite-sized pieces. 2 cups cooked pasta. 1/4 cup pesto sauce. 1/4 cup grated Parmesan cheese.
Instructions: Set a pan on medium heat and add the olive oil. Salt and pepper the chicken breasts that have been cut up, then add them to the pan. This should take about 5 to 7 minutes. Cook until browned and done. Put asparagus and cherry tomatoes in the pan. Add the vegetables and cook for three to four more minutes, until they start to get a little soft. Add the cooked pasta and pesto sauce and mix it all together until it's all hot. Use grated Parmesan cheese to cover the top. Enjoy while hot!
