Alright - here we go. Here is April's FREE challenge next month. The challenge is the April Big Salad Challenge #bigsaladchallenge. Here are the rules: 1. Eat one to two salads a day 2. You can only have 2 tablespoons of CLEAR dressing (no Ranch, Thousand Island or creamy dressings of ANY kind) 3. Only 2 TB of WHITE cheese is permitted such as feta, gorgonzola, mozzarella, provolone, etc. NO CHEDDAR, AMERICAN (that's not real anyway) or orange/yellow cheese allowed 4. You can have nuts but only 1 tablespoon because they are high in fat 5. You can have up to 2 TB of seeds (sesame, sunflower, pumpkin, etc.) 6. No croutons allowed 7. Add lean protein to help fill you up such as Albacore tuna, chicken breast grilled (NOT fried or breaded) or shrimp to name a few 8. Fill up on dark greens. The darker the better. 9. Post a picture of your salads DAILY with hashtag #bigsaladchallenge to get noticed and featured 10. No pasta salad, potato salad, chicken salad that's filled with high-fat mayonnaise, etc. Keep it as plant-based as you can. Bean salad, etc. is acceptable and very filling. 11. Be creative Who's IN?
