Cooking food in coconut milk makes everything nice... and nutritious! What is your favorite coconut milk recipe?

Ginataang Kalabasa Recipe (Filipino Coconut Milk Stew)
Translation: “Because I have a visitor (with word play on the Filipino word sitaw, or long bean).”
Sitaw (Tagalog), Batong (Bisaya), Utong (Ilokano) is a vegetable known for it’s long and narrow pods. It can be as long as half a meter when grown! It is typically cut into small pieces before cooking.

I was reminded of April 7, 2023 which was the day when I spontaneously decided to finish watching Alex Proyas' Knowing (2009) after stalling and rewinding it for countless of times already. It also happened to be a Good Friday and my brother-in-law's 28th birthday. ❤
