Enjoy the tastes of Soave with this delicious dish that combines soft shrimp infused with Soave wine with rich lemon risotto. Wine's light scents go well with the richness of the shrimp and the sourness of the lemon, making a delicious mix of tastes that will please your palate.
Ingredients: 1 cup Soave wine. 1 pound large shrimp, peeled and deveined. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 cup Arborio rice. 4 cups chicken or vegetable broth. 1 lemon, zest and juice. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Soave wine should be mixed with the shrimp in a bowl for 30 minutes. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook until it smells good. Put the shrimp in the pan after marinating them. Cook for about two to three minutes on each side, until they are pink and fully cooked. Take the shrimp out of the pan and set it aside. Add the Arborio rice to the same pan and stir it around a few times a minute for about two minutes, until it starts to get a little toasted. Slowly add chicken or vegetable broth to the pan, 1/2 cup at a time. Keep stirring until the liquid is gone, then add more. Keep cooking for another 20 to 25 minutes, or until the rice is creamy and still has some bite to it. Add grated Parmesan cheese, cooked shrimp, and lemon zest and juice. Add pepper and salt to taste. Before serving, sprinkle with fresh parsley.
