A delicious and nutritious bowl featuring honey Sriracha glazed chicken served over a bed of quinoa, topped with colorful vegetables and avocado. The perfect blend of sweet, spicy, and savory flavors.
Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 lb boneless, skinless chicken breast, diced. Salt and pepper to taste. 2 tablespoons olive oil. 1/4 cup honey. 2 tablespoons Sriracha sauce. 2 cloves garlic, minced. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 red bell pepper, thinly sliced. 1 cup broccoli florets, steamed. 1 avocado, sliced. Sesame seeds and green onions for garnish.
Instructions: Put the quinoa and water in a medium-sized saucepan. Slowly raise the heat, cover, and let it cook for 15 to 20 minutes, or until the quinoa is done and the water is absorbed. Add salt and pepper to the diced chicken. Warm up the olive oil in a big pan over medium-high heat. After you add the chicken, cook it until it's browned and done. Mix honey, Sriracha, garlic powder, soy sauce, and rice vinegar in a small bowl using a whisk. Pour the sauce over the cooked chicken and mix it around so that it's all covered. After that, cook for another two to three minutes until the sauce gets thicker. To put the bowls together, add cooked quinoa to each serving bowl. Add red bell pepper slices, steamed broccoli, avocado slices, and honey Sriracha chicken on top. Put green onions and sesame seeds on top. Serve right away and enjoy!
