Ingredients: 1 lb 450g beef sirloin, cut into 1-inch cubes. 1 bell pepper, cut into chunks. 1 red onion, cut into chunks. 1 zucchini, sliced. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: Preheat your oven to 400F 200C. In a bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Thread the marinated beef cubes, bell pepper, red onion, and zucchini onto the soaked wooden skewers, alternating the ingredients for a colorful presentation. Place the assembled kabobs on a baking sheet lined with aluminum foil for easy cleanup. Brush the kabobs with the remaining marinade to enhance flavor and moisture. Bake in the preheated oven for about 15-20 minutes, turning once halfway through, or until the beef reaches your desired level of doneness and the vegetables are tender and slightly caramelized.
