Savor the tastes of Thailand with this Paleo-friendly stir-fried beef. Full of tender beef slices, fresh vegetables, and herbs, this dish is delicious and healthful. It's all cooked in a savory sauce made with coconut aminos and fish sauce. Ideal for an easy and filling dinner!
Ingredients: 1 lb grass-fed beef, thinly sliced. 2 tablespoons coconut aminos. 2 tablespoons fish sauce. 2 tablespoons avocado oil. 1 bell pepper, thinly sliced. 1 zucchini, thinly sliced. 1 carrot, julienned. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 tablespoon fresh ginger, minced. 1/4 cup fresh basil leaves. 1/4 cup fresh cilantro leaves. 1/4 cup fresh mint leaves. 1 lime, cut into wedges. Salt and pepper to taste.
Instructions: In a small bowl, whisk together coconut aminos and fish sauce. Set aside. In a large skillet or wok, heat avocado oil over medium-high heat. Add thinly sliced beef and stir-fry for 2-3 minutes until browned. Remove from the skillet and set aside. In the same skillet, add garlic and ginger. Saut for 1-2 minutes until fragrant. Add bell pepper, zucchini, carrot, and onion. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp. Return the cooked beef to the skillet and pour the coconut aminos and fish sauce mixture over it. Stir-fry for an additional 2 minutes to heat everything through. Season with salt and pepper to taste. Remove from heat and stir in fresh basil, cilantro, and mint leaves. Serve the Paleo Thai Beef Stir Fry on a plate with lime wedges for garnish.
