てぽた　12月のお茶

みなさま、こんにちは。 師走です。ですが、今年は忙しく走り回らず、ゆっくりお家で過ごすのがよさそうです。

今月のてぽたのおまかせ定期便は「嬉野産 蒸製玉緑茶 つゆひかり」です。産地は佐賀県嬉野市、品種はつゆひかりです。先月お届けした「和紅茶 藤かおり」と同じ40年以上一切の化学農薬の使用をせず、無農薬栽培をなさっている太田さんのお茶です。太田さんにお茶の特徴を伺いました。「つゆひかりは比較的新しい品種で2003年に品種登録されています。香りに特徴のある品種 静7132とうまみの強い品種 あさつゆを親に持ち、香りとうまみを併せ持っています。軽く萎凋させてから加工して香りの特徴を生かすようにしています」とのことでした。また、今回のお茶は被せ（被覆栽培）です。1週間ほど被覆するのが一般的ですが、農家さんに伺ったところ、2020年は「被せたあとに、グッと冷えたので２週間弱とやや長めに被せています」とのことでした。被せることで、旨みが増し、茶葉のツヤが良くなるそうです。今回のお茶は低温でじっくり抽出いただきたいです。淹れているときの茶葉の色も美しいですよ。

また、「嬉野産 蒸製玉緑茶 つゆひかり」は、上質な柔らかい茶葉だけを使用して製茶されています。飲んだあとの茶殻をよろしければ食していただきたいと思います。もちろんお好みですが、無農薬で安心して食べることができる茶殻はビタミンCたっぷりです。寒い季節に風邪もインフルエンザもコロナも吹き飛ばす体づくりの一助になってくれないかな～と希望しつつ（^^）、お召し上がりください。我が家は揚げ物をほとんど作りませんが、良く絞って乾かしてお野菜と一緒にかき揚げも良いですし、絞っただけの茶殻にかつおぶしとポン酢をかけて食べていただくお浸しや、白和えにしてもすごく美味しいですよ。白和えは胡麻ドレッシングを使うと豆腐と茶殻をまぜるだけで簡単にできます。茶葉の緑がアクセントになってきれいです。最近我が家では、絹ごし豆腐の上にいただきもののバジルオリーブめんたいと茶殻をのせて食べるのが流行りました。美味でした。

今月のお茶は見ても、飲んでも、食べても美味しいお茶です。存分に楽しんでいただけるとうれしいです。
