The key so far has been to lean heavily on the special offers on fruit and veg in some of the supermarkets and base most of the week dishes around those. Other tricks include being clever with meat and reducing waste as much as possible. : That's where my 1 chicken, 3 dinners trick is paying back in dividends. Each meal is filled with fresh veg and one carb to round it off. Note: Crispy chicken skin is super easy and you will never throw out this delicacy again. Simply, pull the skin off as best you can, it doesn't have to be in one piece. Flatten it out on a baking tray and sprinkle with salt and any dry herb/spices you feel like. Place another baking tray on top of it to keep it flat. Put it in the oven for approx 20 minutes, maybe longer. It will be all deep golden and super crispy when ready. Once you've tasted this you will kick yourself for wasting such good skin.
