2 ½ teaspoons dried lavender buds**
¼ cup 1 tbs all-purpose flour
2/3 cup fresh lemon juice
Confectioners sugar for dusting
Preheat oven to 350 degrees F.
Make lavender sugar by blending the sugar and 2 teaspoons lavender buds in a blender; blend until the lavender is powdered.
In a medium bowl, blend together softened butter, 2 cups flour, and ½ cup lavender sugar until dough forms. Do NOT over blend. Press into the bottom of an ungreased 9x13 inch pan.
Bake 15-20 minutes in the preheated oven, or until firm and golden. Allow crust to cool.
In another bowl, whisk together the remaining 1 ½ cups sugar and ¼ cup 1 tbs flour. Whisk in eggs, lemon juice, lemon zest and remaining ½ teaspoon lavender buds. Pour over the baked crust.
Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
After bars cool, dust lightly with confectioners sugar, cut, and enjoy!
**Make sure to use cooking lavender, which should have been grown without the use of pesticides and herbicides
