Ingredients: 1 cup all-purpose flour. 1/4 cup cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup vegan butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 flax egg 1 tablespoon ground flaxseed mixed with 3 tablespoons water. 1 teaspoon vanilla extract. 1/2 cup vegan chocolate chips. 1/2 cup chopped mixed nuts and dried fruits e.g., almonds, cashews, raisins, dried cranberries.
Instructions: Start by heating the oven to 350F 175C. Put parchment paper on the bottom of a baking sheet. To make the flax egg, mix water and ground flaxseed in a small bowl. Do nothing for 5 minutes so it can get thicker. Mix the cocoa powder, baking soda, salt, and flour together in a medium-sized bowl using a whisk. Softened vegan butter, brown sugar, and granulated sugar should all be mixed together in a large bowl until the mixture is light and fluffy. Add the vanilla extract and the flax egg that has been prepared and mix well. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the vegan chocolate chips, chopped nuts, and dried fruits. Using a spoon or cookie scoop, place round tablespoons of dough about 2 inches apart on the baking sheet that has been prepared. Bake the cookies for 10 to 12 minutes, or until the edges are set and the tops feel a little firm. After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down. As a snack or dessert, these vegan trail mix chocolate cookies are very tasty.
