Indian Lemon Turmeric Rice, sometimes referred to as Lemon Rice, is a tasty and zesty rice dish that is frequently consumed as a component of South Indian cooking. It's easy to prepare and bursting with tart lemon flavor, offset by the crunch of peanuts and the earthiness of turmeric.

Ingredients: 2 cups cooked rice. 2 tablespoons oil. 1 teaspoon mustard seeds. 1 teaspoon cumin seeds. 2 green chilies, chopped. 1/4 teaspoon asafoetida hing. 1/2 teaspoon turmeric powder. 1/4 cup peanuts. 10-12 curry leaves. 1/4 cup chopped cilantro. 1 lemon, juiced. Salt to taste.

Instructions: Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Add cumin seeds, chopped green chilies, and asafoetida. Saut for a minute. Add turmeric powder and mix well. Add peanuts and curry leaves. Cook until peanuts are lightly browned. Add cooked rice and mix gently until well combined with the spices. Add chopped cilantro, lemon juice, and salt. Mix well. Cook for another 2-3 minutes, stirring occasionally. Serve hot and enjoy!

I very seldom make curry and when I do I make it traditional style. Today I opted for the #imana Mild Natal Curry and added Dhania Powder, Garam Masala, Breyani Powder and crushed Ginger Garlic. I really can’t get enough of the turmeric rice.

It’s my 7th day of quarantine and I’ve been asked several times “Joey, bakit mo pa rin sinusunod, ang dami ngang nanggaling kung saan-saan tapos nasa mall eh.”

I have several answers, and I enumerated my answer: 1. I have a very hard time disobeying policies (ehem OC nga) 2. I am checked my DILG contact tracers constantly 3. I am not them 4. I want to, so why not? 5. Seryoso, gagawin ko na atang ninang sa magiging anak ko kung magkakaanak ako ung contact tracer na medyo textmate ko na sa kachecheck. Deh joke. Haha

So wahaha…anyway, I enjoy finding out how long my food supply would last and what else I can do with dwindling ingredients. No sarcasm intended there.
