Vegan Spinach Ricotta Tarts

1 cup cashews one onion, peeled and chopped the juice of one lemon 1/4 cup non-dairy milk 2 tbsp. nutritional yeast 1 tbsp. balsamic vinegar 1 tbsp. pure maple syrup 3 cloves garlic 1 tsp basil 1 tsp sea salt 1/2 tsp black pepper 1 block (350 grams) of firm tofu, broken into chunks 2 packed cups of fresh spinach 36 premade tart shells Place; cashews, onion, lemon juice, non-dairy milk, nutritional yeast, balsamic vinegar, maple syrup, garlic, basil, salt, and pepper, in a food processor and process until well-combined.  Add the tofu and spinach and process again (scraping down side occasionally) until creamy. Preheat oven to 375 degrees F. 

Divide half of the batter between approximately 36 tart shells.  Bake in preheated oven for 20 minutes. (You will likely need to do a few batches.) Allow to cool several minutes before serving. (Delicious warm or room temperature.)

Love trying out the vegan products at ALDI. Sometimes they have limited addition, experimental products. These were legitimately so good!!! A little *too* junk foody for my taste, but I’m sure they hit the spot most when you’re not sober.
