A delicious and hearty vegan casserole made with quinoa, black beans, vegetables, and enchilada sauce, cooked slowly to perfection in a crockpot.
Ingredients: 1 cup quinoa, rinsed. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 15 oz diced tomatoes. 1 cup enchilada sauce. 1 cup vegetable broth. 1 small onion, chopped. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 1 cup vegan shredded cheese. Optional toppings: avocado, cilantro, lime wedges.
Instructions: Put black beans, corn, enchilada sauce, vegetable broth, onion, garlic, bell pepper, chili powder, cumin, paprika, salt, and pepper in a slow cooker. Add the quinoa and mix it all together. Use a stir to mix. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours, until the quinoa is done and the flavors have mixed. If you want, you can sprinkle vegan shredded cheese on top during the last 30 minutes of cooking. Serve hot with avocado, cilantro, and lime wedges as toppings if you want.
