Broccoli Cauliflower Bake (Vegetable Au Gratin)

Winter Veg Bake
This bakes up into a pizza like consistency - you can enjoy it as a finger food so is great as a take along meal if you’re eating away from home. It also reheats well so great to take for your lunch break at work. I found baking parchment at the Dollar Tree and at my local discount grocer so no need to go to a specialty baking/kitchen store. Top with sour cream if you like but this is great as it comes out of the oven as a get and go pick up meal.
3 leeks, split, cut into curly ribbons broken apart
1 green bell pepper, seeded, diced
1/2 bunch spinach or other hearty greens, diced
1 c. pine nuts
3 carrots, coarse grated
1 lg. parsnip, coarse grated
8 T. whole wheat flour
2 t. salt
1 t. pepper
2 t. baking powder
8 eggs, whisked
8 T. oil
8 T. milk
1 c. Jarlesburg or Swiss cheese, coarse grated
Option: Seitan or other veg loaf - mix in crumbled with vegetables
Preheat oven to 350 degrees. Prepare a high sided cookie sheet/jelly roll pan by laying in baking parchment or brushing oil on the pan. In a large mixing bowl, toss together vegetables. In a separate bowl, add dry ingredients - whole wheat flour, salt, pepper, and baking powder mixing well. To that same bowl, add eggs, oil, and milk whisking well so there are no lumps. Pour over tossed vegetables, tossing again to make sure liquid covers all vegetables well. Spoon onto cookie sheet evenly layering. Bake 30 min. then coat with grated cheese then return to the oven continuing the baking for 30 min. longer. Let cool and cut into slices as you would pizza.

Aubergine Parmigiana
Only 1300 kcals for the whole thing!
We sliced the aubergine longways and grilled them on the BBQ!
Then layed with our tomato sauce, fresh basil, mozzarella and parmesan cheese.
Cooked for 20 minutes on 180 - easy 😀
Tomato sauce:
2 X tins of chopped tomatoes
2 X teaspoons of tomato puree
1 X teaspoon dried basil
1 X teaspoon salt
1 X teaspoon black pepper
