Rice Sevian Upma is a savory South Indian dish made with thin rice vermicelli and a variety of vegetables. It's a nutritious and flavorful vegan dish perfect for breakfast or as a light meal. This recipe is easy to make and bursting with aromatic spices and vegetables.
Ingredients: 1 cup rice sevian thin rice vermicelli. 2 cups water. 1 tablespoon oil. 1 teaspoon mustard seeds. 1 teaspoon cumin seeds. 1 onion, finely chopped. 2 green chilies, chopped. 1/4 cup carrots, finely chopped. 1/4 cup peas. 1/4 cup green bell pepper, finely chopped. 1/4 cup tomatoes, finely chopped. 1/2 teaspoon turmeric powder. Salt to taste. Fresh cilantro for garnish.
Instructions: In a pan, dry roast the rice sevian until lightly golden. Set aside. In the same pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Let them splutter. Add chopped onions and green chilies. Saute until onions turn translucent. Add chopped vegetables carrots, peas, bell pepper, tomatoes and saute for a few minutes until they are slightly cooked. Add turmeric powder and salt. Mix well. Pour water into the pan and bring it to a boil. Once the water is boiling, add the roasted rice sevian. Stir gently to combine. Cover the pan and let it cook on low heat for about 5-7 minutes or until the rice sevian is cooked and water is absorbed. Turn off the heat and let it sit covered for a couple of minutes. Garnish with fresh cilantro before serving. Serve hot as a delicious vegan breakfast or snack.
