All South Indian need to have a dose of Tamarind in any form atleast once it twice a week. If not, please, sorry to say, you canāt consider yourself one! Itās one of the hallmarks of South Indian food is #tamarindrice Recipe: Dry roast & grind: Channa dal, Urud dal, peanuts (yes, I know, believe me, itās good) fenugreek, coriander, curry leaves, red chilies, sesame seeds, hing & salt- Coarsely ground, cool and store it in a air tight container. Take a key lime size tamarind, soak it in hot water, put it in a blender and pulse it in low, strain it and add some more water to the pulp and squeeze out more water. Save the tamarind water. In a sautĆ© pan, add 1/4 cup of sesame oil, mustard seeds, let it splutter, add Channa dal, peanuts, curry leaves, a couple of broken red Chilli, 3-5 slit Thai Chilli, turmeric, salt, Jaggery and the tamarind water. Let it all cook well and start to thicken. Reduce the flame and sprinkle 2 TBlsp of the ground spice mixture stirring using a whisk continuously so to avoid lumps. Let it thicken and cook until all the oil stars to float. Once it thickens, switch off the flame and let it cool uncovered. Meanwhile, add washed 1 cup of rice to a rice cooker, add 1 & 1/2 of water, add 4 Tblsps of the prepared paste and little bit more salt, mix it well and let it cook. Once the rice is done, transfer it into a bowl and let it cool down fir 20 min covered w a paper towel or a kitchen towel. Now, add more of the tamarind spice paste, mix well, and add more if need be according to your taste. Add a couple of taps of the fry powder and a few Tblsps of sesame oil to the mixed rice. Keep it aside for atleast 20 minutes to set. Itās ready to eat. We just had it w chips! You can store both the fry spice mix and the tamarind mixture for a long time in the refrigerator.
