Tonight I made quinoa burgers ❤ Actually, it was some kind of experiment, but since they turned out very well they became our dinner :)
Weekend wrap up
1. I am 99.9% sure I am done shopping for Christmas. I will do some wrapping and labeling today, but..... wait, I mean big items. I am at a loss on what to shove in my husbands stocking. Ideas??????
2. We met a dog this weekend at adoption event that is just perfect. She would just melt into our family. My husband isn’t ready yet to get another, and honestly the house has so much work to be done that having another 4 legs around would be overwhelming. I promised that if she didn’t get rescued, we would rethink it after the holidays. She’s in a foster home, so she isn’t in any danger and is being super loved on (I know the family).
3. I went and helped out my Mom a bit yesterday get ready for their trip to Florida. She isn’t in pain, but super uncomfortable, and not being able to use your dominant hand is really inconvenient. Plus she is a quilter, and that’s out right now, so she is BORED. The kids made her paintings. But I could tell by the end of the visit she was tired. It’s tough to see tour parents struggle.
4. I go in late (or maybe not at all today), and I have mountains of laundry to fold and wash. Plus meal prep for the next week of retail wife abandonment. But I have a cold and I just want to drink tea or coffee and watch bad tv and sleep. Maybe a compromise might occur.
5. I would like to try adding more vegetarian meals into our rotation. Recipe ideas? Must be kid friendly, but they can be adventurous. Proteins? Help!

I forget about them, but they are delicious. Mushrooms bad. 😝

Yes! Very important! As much garlic as possible! And herbs and seasoning and such as well. Altho we’re cutting down on the salt too per doctor’s orders.

Oo Veggie lasagna sounds good. Or like a veggie goulash bc I’m lazy. Lol We don’t eat mushrooms though. I know. But ew. I am planning stir fry! I bought some things. Maybe I’ll post about it if it turns out well. Shepherd’s pie is an idea. What would I put in it?

Veggie soup sounds good. The best soups are made from throwing everything in the pot. True story. Let me know how your mom’s turns out. It too hot around here right now for soup though. I don’t know if my husband would go for a veggie burger, but thanks for the suggestion.
