SWEET POTATO SALAD
Ingredients for 1 person
one big sweet potato
100 gr lacto fermented tofu
Mushrooms
1 avocado (half is fine too)
Soy sauce
Sesame seeds (optional)
Lemon
Green salad
Vegetable (olive) oil
Preheat your oven at 200° C. ⠀ Cut the sweet potato into thin slices without cutting it completely, leaving the bottom part whole. Place it in the oven and top it with 1 tablespoon of vegetable oil, cook for about 20 minutes at least, depending on its size. *** Cut and place the lacto-fermented tofu in a bowl, add a little bit of lemon juice, garlic, pepper and mix it all with a blender or a fork. Wash the green salad and dry it. Wash the mushrooms and cut them into thin strips, place them on top of the salad (leave them raw), add 1 tbsp of soy sauce, vegetable oil and lemon juice to taste. Cut and place the avocado as well. *** Once cooked, you can place your sweet potato on the salad dish. Top with the lacto-fermented tofu and sesame seeds (optional)!
