Pegasus the Horse was used to make Galloping Gallops the Nightmare:

The whole group of characters planned for the "Frankfurter and the Eight Orbs" game idea, with each of them carrying the orb(s) that are associated with them (because you find them in the same area where you meet that character, mostly... though the Orbs' elements do tend to more or less match up with traits of the character, too.)

…except the Star Orb, which is just kinda lying on the ground off to the side since it doesn't have a character associated with it.

I haven't decided exactly where and how you end up finding that one, but it's probably going to be set up so that it's always the last one that becomes accessible (after you've already gathered up the other seven.)

Dragons and friends playing an RPG in the Warlock’s Menagerie , AKA The Warlock Menagerie, supplement for OD&D and The Complete Warlock (Cathy Hill cover, Balboa Games, 1980)  Judging from the miniature on the table, the unicorn is playing a unicorn.  The little winged frog with D6s in the foreground could be cousin to the spottle toad.

my second Strut the Rooster plush was beheaded in order to make Chick 3 the Three Headed Cockatrice:

One of his wings was used as a fin / sail for Wesley the Frog Dog:

His second wing was used as a wattle for Crash Bang the Basilisk:

His undercarriage was folded in half and became one wing for Colonel McCluck the Griffin:

His tail was used as a wing for Tastes-Like the Seanan McGuire Incryptid inspired Fricken:

And the rest of his body was used to make a wing for Eduardo the Fiery Hellhound:
