The general idea:
Every noun is either masculine or feminine.
Adjectives change their gender to match the noun they're being applied to.
Groups of mixed gender are masculine. This does not mean that everybody in a mixed-gender group is considered to be a man. It just means that the group itself uses the masculine gender.
"Cocina" (kitchen) is feminine while "baño" (bathroom) is masculine. So if you wanted to say that they were "limpio" (clean), you would say "La cocina estå limpia," but "el baño estå limpio." To refer to both of them together, you would say "La cocina y el baño estån limpios."
The more complicated part:
A word referring to a type of person may change gender, but there are many that don't.
Adjectives change their gender to fit the word they're modifying, not the thing the word refers to.
The word "persona" (person) is always feminine, no matter the gender of the person it's referring to. So if you wanted to say that Juanita and Pablo were good people, you would say "Juanita es una buena persona," but also "Pablo es una buena persona." To refer to both of them together, you would say "Juanita y Pablo son buenas personas."
How to talk about nonbinary people:
As a gender-neutral alternative to the suffixes "-a" and "-o," many nonbinary people prefer to use "-e" as a colloquial suffix for the neuter gender, which usually doesn't exist in Spanish.
The most common pronoun for nonbinary people is "elle" (pronounced "eh-yeh") as opposed to "él" and "ella."
"-x" as a replacement for "-a" and "-o" is generally unacceptable because it cannot be pronounced out loud and doesn't fit the rules of the language.
The Spanish word for "nonbinary" is "no binario," which is an adjective that changes its gender based on the noun it's applied to. So if you wanted to say that Lupe was a nonbinary person, you would say "Lupe es una persona no binaria," because the word "persona" is always feminine. But if you wanted to say that Lupe was nonbinary without using the word "person," you would say "Lupe es no binarie," ("binarie" being pronounced "bee-nar-yeh").
Tying this back to the beginning, the sentence "Juanita, Pablo, and Lupe are friendly," would be expressed in Spanish as "Juanita, Pablo y Lupe son simpĂĄticos." Since the group is mixed-gender, the word for "friendly" is in the masculine.
