The light inside an oven is crucial to getting breads to rise. Without the light inside simulating the sun, the bread can't tell which way is up, leaving it twisted and ruined.

You know how yeast is like a living thing? Like a mushroom but we use it's waste instead of it's reproductive organs. So because it's alive, like a mushroom or a plant it expects some sunlight so it knows where to grow towards. When we use it for alcohol we don't want it to grow in any particular direction, we need it to stay still. So we keep it in big vats for in the dark or in barrels.

When you put it in bread you want it to rise so the bread gets bigger. For different breads you use different lights or pans to shape the bread. For sliced bread we put it in a pan with tall sides so the only light is on top to make it grow upwards. This wasn't a problem when we were primarily using wood fire to cook bread because the light was naturally produced from the fire.
