Yall listen up!!
Two tacos for only 95 calories!
This meal is a life saver for me so I thought id share it :)
First, you need to make a 28 calorie tortilla
Credit to @awkward-ana-13 for the recipe, its so easy and taste exactly like a tortilla
1.5 Tbsp of all purpose flour-28 cals
A Pinch of baking soda-0 cals
A pinch of salt- 0 cals
2-3 Tbsp if water, I usually do 3 maybe a little more, it makes the tortilla bigger and spread out thinner
Mix it all together!
Pour into a warm pan and cook till browned
Now this is what I put in mine, but you can substitute for any veggies you want but will have different cals
Dice up ¼th a tomato- 5 cals
32 grams Black Beans- 27.5 cals
I mix my bean and tomato with some salt, pepper and taco seasoning
Shredded lettuce- 5 cals
And Bam! Youve got two super filing tacos for 95 cals!
The exact total is 93.5 cals but round it up :)

Insanely low cal sushi feast recipe!!!!!
Ok so this is mirical sushi😱😱😱Each roll is brace yourselves… 10 calories!!!
It’s amazing I know but I did the math over and over again and it checks out!!
Reminder that 10 calories = 1 potato chip!
So the entire plate is just a tad over 200 cals!! With your sweet chilli sauce and soy sauce you can bump it up (generously because I’m a paranoid rexy) to about 300 for the entire meal!!!
I just finished eating and I feel full but not bloated and I got some good nutrients in there too!!
I missed sushi so much because it could be like 100+ cals a roll YIKES!!
So here’s the recipe!
You will need:
1 cucumber
1 zucchini
1 capsicum
1 spring onion
1 carrot
Alfalfa sprouts
Bean sprouts
Nori seaweed paper
Mirical rice/ konjanc rice (0 cal rice)
Pepper
Cummin
Soy sauce/ sweet chilli to taste
Follow the instructions for your 0 cal rice to drain and prepare
Fry rice in pan without oil to dry out and liquid that may still be on it. Crack fresh black pepper and a pinch of cummin to give the rice some flavour
Begin chopping veggies while rice sits. I suggest peeling thin slices of carrot and zucchini and chopping cucumber and capsicum into thin strips. Chop the spring onion finely
This is the quantity of vedge I used
When you’ve chopped all the vedge begin rolling the sushi using the traditional method. I cant really explain the process but if you google it there are heaps of tutorials!
Be prepared to fail the first few times this was my first go and there was a dog pile of first time failures!
Keep in mind the trick to this super low cal sushi is in the konjanc rice! This beefs up the body of the meal and fools you into feeling hella full!!

Vegan taco night is the best. Seriously.
Recipe for like 8-10 tacos (with leftover lentils):
1 cup dried black lentils, sorted and rinsed (you can also use lentils du puy/French green lentils, but I prefer the texture of the black lentils)
2 cups veggie broth
¼ minced onion
2 cloves garlic, minced
several dashes each of cumin, coriander, chili powder, and ancho powder
dash of hot sauce
Sauté onions for a few min, then add garlic. Sauté another min, then add the rest of the ingredients. Bring to a boil, turn down heat, cover and simmer ~30 minutes until lentils are tender. Feel free to add whatever flavors you like (this time I added some chopped cilantro and diced jalapeño.)
When tender, drain if necessary (I didn’t). Taste and season with salt and pepper, and add a dash of lime juice (this is key, the acidity adds so much flavor)! Heat some tortillas, then top with whatever toppings you like. I used some vegan cheese (VioLife Cheddar), vegan sour cream (Tofutti), medium salsa, more finely minced onion, a little fresh hot pico with lots of jalapeño from my bodega, and additional hot sauce.
I’ve still got like 1-1.5 cups of the lentil mixture leftover, which I’m stoked for because it’s delicious on its own.
IMPORTANT PSA: SUPER LOW CAL PEANUT BUTTER
Hi, I just figured out how to make peanut butter that is only 35~ calories for a serving (a serving of peanut butter is 2 tablespoons), sugar free, and it tastes really good! A normal serving of peanut butter is 180 calories, for comparison.
I didn’t think it would work.
Buy peanut butter powder at the store, usually it’s around the baking aisle. It should be around 50 calories per 2 tablespoons.
Buy almond/coconut milk or whatever kind you use. Mine is 30 calories per cup.
Buy a bottle of zero calorie sugar free maple syrup, it exists and it tastes pretty good. Although this is optional, I just think it helps. It’s a great sweetener in general for when I get sick of the taste of stevia.
The ratio is about 2 tablespoons to 1.5 tablespoons of almond milk, and a dollop of the syrup. I just did that until I filled a jar, and then mixed it all together with a little mixing knife and it came out just like normal peanut butter. Don’t add too much milk/syrup right away, just go as needed to get the consistency you need. In the end since the powder is dilluted by the almond milk (which is like less than 2 calories per tablespoon, you get about 3-4 tablespoons of peanut butter per 2 tablespoons of powder. Meaning your total calorie count per tablespoon is about 13-17 give or take.
If you get a major craving, just a spoonful of this will really help.

275 Calories for 2 stuffed bell peppers
Ingredients
2 half bell peppers 60 cal
Pasta sauce 90 cal (I had leftover sauce you can always use tomato sauce)
Broccoli cauliflower rice 35 cal pouch
Cashew queso 30 cal *can always use extra cheese or nutritional yeast
1 slice vegan cheese 60 cal
Hot sauce (tapito) 0 cal
Instructions SUPER EASY!!!
Pre-heat the oven
On a pan warm up the cauliflower rice add the pasta sauce and then queso
Stir the cauliflower till the sauce is combined add hotsauce if you'd like or any seasoning to your liking
Once you like your cauliflower rice you can place in the bell pepper you can use 1 bell pepper and cut in half and use both halfs (these were leftovers so i had 2 halfs) also make sure you take out the seeds and stem
Once you place the cauliflower rice in the bell peppers you can add your cheese i use 1 slice and just place them on both
Put in the oven until the cheese melts about 5-10 minutes
Enjoy! Very low cal and filling

Makes 6

1 cup plain all-purpose white flour
1 tsp. baking powder
½ tsp. salt
2 Tbsp. Light Mayonnaise
½ cup skim or 1% milk
Note: If using self-rising flour omit the salt and baking powder. Soft wheat flour makes the best biscuits. 1. Preheat oven to 375 degrees F.
2. Spray a 6 cup muffin tin with nonstick spray.
3. Combine all ingredients. Stir until smooth.
4. Divide evenly between the 6 muffin cups.
5. Bake at 375 degrees F until golden brown.

VEGAN RICOTTA
3 cups raw macadamia nuts or soaked blanched almonds* (or 1 16-ounce block extra firm tofu, drained and pressed dry for 10 minutes // amount of tofu is as original recipe is written // adjust if altering batch size)
2 Tbsp nutritional yeast
½ cup fresh basil (finely chopped)
2 tsp dried oregano
1 medium lemon, juiced (~2 Tbsp or 30 ml as original recipe is written)
1 Tbsp extra virgin olive oil (optional // for flavor + richness)
1 tsp sea salt + pinch black pepper
½ cup water (plus more as needed // reduce if using tofu as it requires less)
¼ cup vegan parmesan cheese (optional // plus more for topping)
THE REST
1 28-ounce jar favorite marinara sauce (I like Trader Joe’s organic tomato basil)
3 medium zucchini squash thinly sliced with a mandolin (or sub eggplant)
1. Preheat oven to 375 degrees F (176 C).
2. Add macadamia nuts to a food processor or blender and mix to combine, scraping down sides as needed. You’re looking for a fine meal.
3. Add remaining ingredients: Nutritional yeast, fresh basil, oregano, lemon juice, olive oil (optional), salt, pepper, water and vegan parmesan cheese (optional). You are looking for a well-puréed mixture/paste.
4. Taste and adjust seasonings as needed, adding more salt and pepper for flavor, nutritional yeast for cheesiness, and lemon juice for brightness.
5. Pour about 1 cup (amount as original recipe is written // adjust if altering batch size) marinara sauce into a 9×13-inch (or similar size) baking dish and line with thinly sliced zucchini.
6. Scoop small spoonfuls amounts of ricotta mixture over the zucchini and gently spread into a thin layer. Spread on a layer of marinara sauce and then top with more zucchini slices. Continue until all filling and zucchini are used up. The top two layers should be zucchini and then sauce. Sprinkle on vegan parmesan cheese (optional), and then cover with foil.
7. Bake covered for 45 minutes, then remove foil and bake for 15 minutes more. The zucchini should be very easily pierced when cut with a knife. Let cool for 10-15 minutes before serving.
8. Serve immediately with additional vegan parmesan cheese and fresh basil. Leftovers keep for 2-3 days in the refrigerator, or in the freezer up to 1 month.
